About this coffee :
The coffee comes from Daye Bensa Gatta Farm and is located in the heart of the village of Shantawene, 10 km from the town of Daye, amidst natural forest and native trees said to be over 200 years old.
The farm is located within easy reach of the farms of Bombe, Shantawene and Keramo villages. It is surrounded by rivers, which makes the soil very fertile. One of them flows down from the hills above Karamo, separating Shantawene village from Bombe.
In order to preserve the natural shade and fertility of the soil, various shade trees are planted on the farm with the advice of the Ministry of Agriculture. Together with the farms of the cultivators, the farm is verified as organic, C.A.F.E PRACTICE, UTZ and Rain Forest Alliances.
The coffees here are processed as anaerobic Natural coffees, which means the whole cherries are fermented in a closed environment and dried. Normally this process gives you the perception of a much sweeter coffee, this is because through fermentation microbes create compounds called esters that are absorbed by the seed. These esters survive the roasting process and are precursors to aromas that are created in the caramelization process of roasting, this makes the coffee seem sweeter. They dry coffees on the patio, in the box, and on raised beds.
