About The Hub Coffee Roasters:
About this coffee :
Jairo Arcila began growing coffee more than 35 years ago when his father fell very ill and could no longer work. He started out at Racafe, Colombia’s second-largest coffee exporter. After a few years, he earned enough to buy his first farm, Finca La Esmeralda, where he has been growing coffee ever since.
In 2004, he took a hiatus from coffee to plant avocadoes because of a price collapse in the Arabica industry. However, thanks to the rise of third-wave specialty coffee around the world, he is now back on his beloved coffee lots, helped by his wife Helena and his son, Filipe.
This coffee was picked and transported the same day to La Pradera, Cofinet's processing station. This lot was exposed to a dry anaerobic fermentation of 24 hours and later placed inside grain pro bags for 60 hours whilst maintaining a temperature of below 22 degrees celsius by placing it inside a water tank. After which, the coffee is then frozen for 72 hours.
This adapted ICE fermentation processing method is a result of a year of trial and error, which reduces significantly the damage caused to the embryo during the ICE fermentation while conserving all the positive impact of the initial ICE fermentation process in the cup profile. This results in a coffee with a general increase in floral notes, creamier body, and gentle liquorice and cacao notes.
Superb fruit bomb with vibrant notes of fruit punch & pineapple, finish with a winey chocolate twist. A fruity coffee perfect to enjoy after lunch as a refreshing cuppa.
