About this coffee:Β
Legesse Botosa Dikale is just 30 years old, owning 0.43 ha of land in Bursa Kebele in the Sidama region of Ethiopia, where he exclusively grows the 74-158 Kurume variety which he processes as a natural.
The natural process constitutes the oldest method of coffee processing and involves drying the whole coffee cherry with the fruit still intact, allowing the beans to absorb the sugars and flavours from the pulp and skin.
Legesse dries the cherries for 24-28 days, giving great attention to ensuring even drying to avoid fermentation defects.
About Coffee Collective:Β
At Coffee Collective, we work from a simple yet essential philosophy: To create truly great coffee, we start with the people who grow the beans. We trade directly with coffee farmers and pay prices far above market level. This is not just an investment in quality but also in farmersβ livelihoods, their future, and a more sustainable coffee industry.
Just as you pay a premium for a great wine, we believe that exceptional craftsmanship and outstanding quality deserve fair rewards. By paying more, we enable producers to invest in better production methods, improve their quality of life, and develop coffee to new heights, something you can taste in every cup.
