The roast-date card

Every bag we send has its roast date printed on it. Read it right and you'll know the day to open it.

  • Roast date on every bag
  • Out within 24 hours of roasting
  • Best from day 7 to 30

The card

The day-7 rule

  1. Flip the bag. The date on it is the day we roasted it, not a best-before.

  2. Day 1 to 6: resting. Still gassy, tastes thin or sharp. Wait.

  3. Day 7 to 30: the window. Brew it now; this is the stretch the bag was roasted for.

  4. After day 30: still fine in milk, past its best black.

  5. One bag open at a time. The rest sealed, airtight, away from heat. Supermarket coffee shows a best-before date; ours shows the day it was roasted.

Why the date matters

Roasted after you order

We roast your beans once the order is in, and they leave us within 24 hours of the drum. The date on the bag is that roast.

Why the first week waits

Fresh beans are still letting go of carbon dioxide. In the first week that gas pushes water away from the grounds, so the cup comes out thin or sharp.

Grind when you brew

Whole beans hold their window. Ground coffee fades far faster, so grind just before you brew if you can.
