About this coffee :
Finca La Fortuna is Pedro’s sole means of supporting his family (his wife and two young daughters), so he is sure to follow the very best practices to ensure productivity and quality. His efforts are paying off. He recently received a score of 90 points for one of his lots in a regional coffee competition!
Processing is central to the approach to quality. During the harvest, he makes sure that the coffee is selectively hand-harvested, with only the ripest cherries being picked at each pass. After picking, the coffee is delivered to the farm’s small wet mill, where it is pulped on the same day it is picked. After pulping, the coffee is fermented and then washed in clean water.
After it is fully washed, the coffee is moved to raised beds dry. The coffee will remain here, being constantly turned and protected from extreme weather until it reaches optimal humidity. After this, the parchment coffee is stored in clean sacks until it is ready to be delivered to the dry mill.
