About this coffee:

Owned by Negusse Debela, Refisa washing station in Nensebo, Sidamo produces coffees that live up to Sidamo’s reputation for producing a clean, sweet and floral cup. Farmers delivering to Refisa farm coffee at 1,850 to 2,000+ meters above sea level. The ideal microclimate, combined with farmers' careful oversight and the impact of unique local landraces help create a delicious, clean, sweet and floral coffee.

Cherries are collected manually and hand sorted later. The cherries are pulped by a traditional Agaarde Discpulper. Skin and fruit pulp are removed before the machine grades the parchment in water as 1st or 2nd quality, determined by density. Then the beans go through wet fermentation for 72 hours

Coffees are washed in channels and graded in water by density. The lower density (lower quality) will float and are removed, leaving only the denser and therefore higher quality beans separated as higher grade lots. Coffee is then piled up in layers which are 2cm in height and dried over a 10 day period then followed by hand sorting for 2-4 hours. Cherries are collected manually and hand sorted later.

This coffee has a smooth yellow floral note with lime citrusy refreshing notes, pair with an orange juicy mouthfeel in the cup.
