About this coffee :

Guatemala recognized and responded to the needs of the emerging specialty coffee sector earlier than most coffee-producing regions. Anacafé, the coffee producers association in Guatemala, identifies seven growing regions: Fraijanes, the plateau south of Guatemala City; Coban, a rainforest region in the center of the country; Huehuetenango, highlands near the border with Mexico; Atitlan, primarily the volcanic mountains on the Pacific side of Lake Atitlan; San Marcos, between Huehuetenango and the Pacific Ocean; Oriente, the driest of the growing regions located near the eastern border with Honduras; and the most famous of all, Antigua, nestled among the volcanoes an hour’s drive southwest of Guatemala City.

Humberto Gomez Jimenez lives in Rio Ocho - one of the most incredible places around the Tajumulco village near Huehuetenango. Humberto owns 2.5ha of coffee growing land, and has been in the coffee production business for nearly 40 years. He fell in love with the idea of specialty coffee nearly five years ago after discovering the potential for improving the quality of his coffee and land.

This coffee is depulped into a concrete fermentation tank, where it is fermented with water for 18-24 hours. After washing, the coffee is left to the patio sun-dry on the concrete of Humberto’s backyard.

A beautiful coffee that originated from the highest peak of the volcano in Central America - Tajumulco. This cup has a pleasant medium body with an apparent taste of pecan nutty notes & a long lasting sweet lingers in your mouth. A good resemblance to classic coffee with excellent comfort in taste.
