About this coffee :

San Payo is located in El Pinabete, municipality of Mozonte in the department of Nueva Segovia. It is an eco-forest Farm, surrounded by mountains and wildlife, it is handled personally, is environmentally friendly and does simple, traditional but functional processes, we give proper management in the fertilization, pruning, and regulation of shadows, also we process the pulp making compost and once ready rejoins the coffee plantations.

This lot was done with carbonic maceration natural processed. Picking only deep red cherries & cherries are sealed in tanks at cool temperatures for an extended fermentation time to develop jelly-like texture. Then the cherries are removed from tanks and dried in full sun on raised beds, stacked a few cherries deep. 

First surprised by its elegant winey flavours, attracted by its blackberry sweetness next. This coffee will transport you to a warm bike ride through a berry farm.
