About this coffee : 

This remarkable Natural processed lot comes from Trabocca’s ‘Operation Cherry Red’ project. Operation Cherry Red (OCR) coffee is a quality development project run by Trabocca coffee. It ensures farmers are paid premiums to produce exceptional coffees by sorting the best ripe red cherries and taking diligent care during drying. These premiums are paid back into the farmer groups through investing into drying beds, cooperative tools and some pulping equipment.

This selection is from the Darra area within the Ethiopian region of Sidamo. Grown by smallholder farmers who each typically has about 0.5 hectares, and deliver their coffee to privately run mills, this coffee is farmed at mean altitudes of around 1950masl.

A special preparation unwashed lot, this coffee displays the tangerine and clean tasting guava fruity characteristics. A juicy coffee for which well processed Ethiopian lots are famed.

Brewing Recipe : 

Espresso 
20g of coffee yield to 40g of espresso 
30 - 35 seconds

Filter
20g of coffee to 300ml of water
2-3 minutes, 93ºc brewing temperature
