About this coffee :
Bali is where Catur Coffee Company do a bunch of different things: from small-scale experimental projects all the way to serious scaled-up operations. This particular lot was a mixture of different post harvest processing, blended into one to achieve an interesting cup.
The coffee cherries started in the same tank, inoculated with Klebsiella, Lactic Acid Bacteria (LAB), Pichia & S. cerevisiae yeast and then left to ferment in the massive 7,000 litre tank. The tank is sealed with a steel lid to ensure an anaerobic environment.
After the desired ph is reached, the fermentation is stopped and the coffees are split into 3 different drying techniques: 1 goes straight to the drying beds, 1 goes into a demucilager and washing and another 1 goes to the demucilager and goes straight into drying without washing.
Once the parchments are completely dry, they are then sent out for hulling to remove the coffee bean from the parchment and then off to the dry milling process to sort the beans based on weight, size, and color. We then put them all back together inside hermetic sealed bags to homogenise their moisture level and water activity.
Indonesia boasts a rich history of coffee production; however, its coffees have recently been overlooked by the specialty market. We take great pride in our innovative and continuously expanding supply chain, enabling us to offer you high-quality coffees sourced from various unique regions in Indonesia.
This Bali coffee from Catur Coffee Company is truly vibrant & sweet. Refreshing grapefruit juiciness and cocoa note in the mid-tone, pair with kyoho grape on the aftertaste. A delightful coffee best enjoy after lunch to keep the day going.
