About This Coffee

This is a washed micro-lot from the high-altitude coffee lands of Tolima, in central Colombia. The region's terroir gives Edward Sandoval's coffee an altogether unique cup profile: delicate melon sweetness and a soft, tea-like body that makes it endlessly drinkable. It shines as a filter coffee, yet holds up beautifully as a bright, expressive espresso.

Edward Sandoval spent years with Colombia's National Federation of Coffee Growers, promoting varieties and best practices to farmers across the country. Along the way he realised specialty coffee reached far beyond what he was teaching, so he struck out on his own. Across his three-hectare farm he now cultivates exotic varieties including Gesha, Mokka and the rare Chiroso featured here. This washed Chiroso micro-lot is the clean, floral result of that careful work.

How Much Coffee Is in a Bag?

The 283g bag brews around 18 to 19 filter cups, and the 2lb (907g) bag brews around 60 cups at 15g per cup. Chiroso is a rare, separated micro-lot, so each bag is a limited chance to taste a variety you will not find often in Malaysia.

Is this better as filter or espresso?
Both work, but filter shows it best. The washed Chiroso is delicate and tea-like, so a pour-over highlights the pear, oolong and clean finish. As espresso it is bright and expressive at a 1:2.3 ratio.

What does it taste like?

How fresh is it?

Any brewing tips?
Use filtered water at 93°C and a 1:17 ratio for filter. If the cup tastes sour, grind finer; if bitter, grind coarser. Adjust in small steps to dial in the sweetness.
