About This Coffee
Jorge grew this Geisha at Finca La Roca, a 7-hectare certified organic farm in Huila, Colombia. Geisha is one of the most prized and aromatic coffee varieties in the world, and it shines here in a meticulous white honey process.
After harvest, the cherries were floated to remove defects, then fermented for 48 hours. During depulping, just a tiny amount of fruit was left in contact with the seed — the signature of the white honey method — before the coffee dried slowly over 14 days. The result is a cup that keeps the clarity of a washed coffee while gaining a rounder, honeyed sweetness.
