02 — Origin

La Salvaje means wild.

The Caballero family has produced coffee around Marcala in western Honduras for generations. Fabio Caballero Jr., a fifth-generation producer, founded Finca La Salvaje in 2019 with his grandfather Don Fabio Caballero — himself the 2018 Honduras Cup of Excellence winner. The farm grows Geisha and Java from seed sourced at Finca San Francisco.

La Salvaje means "wild" in Spanish, and the name reflects the untamed environment the coffee grows in: rich with birdlife, native flora and natural shade.

How fresh is the coffee when it arrives?+

This lot is roasted by Proud Mary on the date shown beside the size, and ships about one week after roasting — right as the beans enter their 2-to-3-week peak. Domestic orders typically arrive 1–3 business days after dispatch.

When is the coffee at its best?+

Beans need about 5 to 7 days to degas, then hold their peak from 7 to 30 days after the roast date printed on the bag. Keep the bag sealed, somewhere dark and room-temperature — never in the fridge.

Whole bean or ground?+

Whole bean stays fresh longest, so pick that if you have a grinder. If you don't, choose the grind that matches your brewer and we grind it right after roasting.

How does the subscription work?+
