This offering from Bookkisa is our first washed Ethiopian coffee of the year. We've been enjoying the ripe grape jelly flavor, along with a subtle blueberry note. The welcome, perky acidity is quite notable amongst all the washed Ethiopian coffees we've tasted so far this year. Depending on its temperature, this coffee also shows white peach, grapefruit, and lovely florals. 

This coffee is minimally processed. After mechanical de-pulping, the coffee soaked for just 12 hours. After that short fermentation, it was dried on raised tables. 

Sookoo Coffee, owned by local legend Ture Waji, is a long-standing relationship for Osito Coffee, the importer of this gem. After many years of buying exclusively naturally-processed coffees from Ture and Sookoo, Osito purchased this washed coffee, a product of the sub-kebele (sub-ward) of Bookkisa.
