About this chocolate bar:
Like single origin coffee beans, the single origin chocolate bar is made of cacao beans from a single Malaysian farm to exhibit its unique flavour characteristics. The cocoa beans have gone through 6 days of fermentation, part in oak.
Early in 2020, we visited a cocoa growth North of Ipoh with MYSI* researchers to develop nouveau fermentation methods that would make chocolates that are healthier and more flavorful.
Typically, cocoa fermentation takes between five to seven days, but in results recently published in the Journal of The Science of Food and Agriculture**, we found a way to ferment for as short as three days, while using cocoa harvested earlier; yet producing more phenolic content, antioxidant and epicatechin, each with added health benefits. Notably, the chocolate acquired rich and deep yet clean flavours that impressed our tasting panels.

All chocolate bars are tempered chocolate, hence it does not melt easily and is safe to ship. We recommend leaving the chocolate bar aside overnight at room temperature once you receive it and the chocolate bar will be perfect to consume the next day.
