About This Coffee
Yobani Ramos and her husband Yaved Guarnizo own Finca La Fuente, a small farm at the end of the road in Tarqui, Central Huila. Their roughly six hectares climb from 1,825 up to 2,000 metres above sea level, planted with Caturra, Colombia and Pink Bourbon. The cool, high-altitude air lets the cherries ripen slowly, building the sugars and complexity behind this cup.
The farm is grown to organic and biodynamic principles, with care for both the plants and the wildlife around them. Yaved makes his own composts and natural pesticides, while the recently renovated wet mill — new tiled tanks and shade-covered drying beds — lets them slow the drying and protect every detail of flavour. The result is a clean, fruit-driven lot that showcases the very best of Colombia.

This is a filter coffee at heart. The light roast and bright, fruity character shine through a pour-over or batch brew. You can pull it as espresso, but expect a lively, acidity-forward shot rather than a classic chocolatey one.

How fresh is it?

Use filtered water at 93°C and a 1:17 ratio (24g coffee to 400ml water) over about three minutes. Dial your grind to taste: finer if it is sharp or thin, coarser if it is bitter.
