A decaffeinated Colombian co-ferment from Brayan Alvear, grown as Caturra and Colombia and put through an inoculated fermentation, harvested in June. Onyx roasts it moderate, at Agtron 123. You get watermelon, powdery candy, honeycomb and caramel, on filter or as espresso.

How fresh is the coffee when it arrives?+
This lot is roasted by Onyx Coffee Lab on the date shown beside the size, and ships about one week after roasting — right as the beans enter their 2-to-3-week peak. Domestic orders typically arrive 1–3 business days after dispatch.
When is the coffee at its best?+
Beans need about 5 to 7 days to degas, then hold their peak from 7 to 30 days after the roast date printed on the bag. Keep the bag sealed, somewhere dark and room-temperature — never in the fridge.
