Ecuador Jose Jijon is a washed single-origin coffee grown at 2,222 masl on Finca Del Putuchio in Loja, Ecuador, by producers Jose & Pepe Jijon. About This Coffee
This lot comes from Putushio, a mountain rising next to the Jijon family's high-altitude farm in Loja at 2,222 masl. The area is scattered with historical artifacts dating back more than 3,000 years, and its rugged terrain lends the coffee what Pepe Jijon describes as “mystical” character. At this elevation, the washed process keeps the cup clean and transparent, letting the variety and the terroir of Putushio come through.
The variety itself is part of the story. Typica Mejorado traces its lineage to Ethiopian landrace roots and resembles classic Typica, but with an amplified, more complex profile — hence the name, which means “improved Typica.” It is prized among growers for the vibrant, aromatic cups it can produce, and here it delivers clementine, white tea and violet.

Filter. It is roasted light for pour-over and brews into a clean, tea-like cup with clementine, white tea and violet. You can pull it as espresso, but it shines as filter and that is how we recommend brewing it.
What does Ecuador Jose Jijon taste like?
Delicate and floral. Expect bright clementine citrus, a soft white-tea body and violet aromatics, finishing clean and sweet. It is light-bodied rather than rich or chocolatey.
How fresh is the coffee?
We roast to order and ship within one week of your roast date. These beans are at their best 2 to 3 weeks after roasting, so there is no rush to open the bag.
Any tips for brewing it well?
Start at a 1:17 ratio (16g coffee to 260ml water) at 93°C over about 3 minutes. If it tastes sour, grind finer; if bitter, grind coarser. Use filtered water to keep the florals clean.
