02 — Origin

High on the Santa Ana volcano.

Finca El Ángel is the sixth and most recent addition to the Silva family's operation, acquired in December 2022. It was originally established in 2018 by the Mathies family, who processed their coffees at the Silva mill in Apeneca. After tasting the first harvest in late 2021, Rafael Jr. and the Mathies family agreed on a sale, bringing El Ángel into the Silva portfolio.

Set high on the volcano's slopes, the farm is planted exclusively with coffee — five varieties in all: Red Bourbon, Orange Bourbon, Pacamara, SL-28 and Geisha. It is in a period of transition as Rafa renovates and refines the original vision while keeping production viable. Early results suggest the direction is sound: in 2024 a naturally processed SL-28 from El Ángel placed second in the Natural category at the El Salvador Cup of Excellence.

How fresh is the coffee when it arrives?+

This lot is roasted by Proud Mary on the date shown beside the size, and ships about one week after roasting — right as the beans enter their 2-to-3-week peak. Domestic orders typically arrive 1–3 business days after dispatch.

When is the coffee at its best?+

Beans need about 5 to 7 days to degas, then hold their peak from 7 to 30 days after the roast date printed on the bag. Keep the bag sealed, somewhere dark and room-temperature — never in the fridge.

Whole bean or ground?+

Whole bean stays fresh longest, so pick that if you have a grinder. If you don't, choose the grind that matches your brewer and we grind it right after roasting.
