Honey, nectarine and walnut from House of Kendal's Liberica in Bagan, Batu Pahat. Honey processed and slow dried under a greenhouse for two to three weeks.
Nectarine and peach through the middle. Acidity sits at 2 out of 10, with a full, rounded body.
Bagan is a coastal locality in Batu Pahat, a few degrees above the equator, on clay soil with a peat topsoil less than 15 metres above sea level.
House of Kendal has been reviving Liberica farms here that were largely abandoned for oil palm in the 1980s. The skin comes off at picking and the beans dry slowly in their sticky parchment under a greenhouse.
